Serves four
Four boneless skinless chicken breasts
2 - 4 oz sliced mushrooms
1/2 sliced red onion
1/2 to 1 cup sherry
1/2 to 1 cup shredded or sliced Ementaler or mild white cheddar
Brown chicken breasts - each side approx 3-4 minutes.
Reduce heat to medium.
Place sliced onions and mushrooms evenly on top of each breast.
Add sherry
Cook, covered, for 1 minute.
Uncover and add 1/2 cup shredded cheese (I use Swiss Ementaler or a
mild white cheddar) to each breast. Return cover and cook till cheese
is melted.
Uncover and serve.
